Pillar House Crab Cakes

1 lb fresh Maine crabmeat
1 tsp. Dijon mustard
1 tsp chopped fresh mint
1 tsp chopped fresh Italian flat leaf parsley
1 tsp fresh lemon juice
1 tsp chopped fresh dill
1 T mayonnaise

1. Combine everything very gently so as not to break up chunks too much

2. Add breadcrumbs to hold everything together, approximately 1/4 cup

3. Taste and season with salt and paper

4. Let sit in refrigerator 1 hr. before shaping into cakes

5. Form 2 oz cakes, fry in as little oil as possible, crisp on both sides, and place in 400 degree over for 4 minutes.

6. Squeeze a little lemon juice on top of each cake.

They make a tasty appetizer or party snack or place between slices of a warm baguette with tomatoes and romaine lettuce for a tasty sandwich.
